Ruthy's Lechon
Ruthy's is a humble roadside lechon institution in Poblacion, once known as Mila's Lechon and now run by the founding family's next generation. It opens only on Sundays, serving lechon carved fresh off the spit and seasoned with lemongrass and star anise. Long lines form early for its widely praised skin and juicy meat.
